Hey Padawans,

I intended to do this much sooner, but the first week at my location has been kind of crazy and leaving me absolutely wiped at the end of the day. Good news is I AM LOVING IT.

So, following up on something we discussed in a previous post (#5: 10 foods you aren’t storing properly) regarding storing meat, and more generally food.

In professional kitchens, food is stored according to something called a food hierarchy. The food hierarchy is a plan for storage designed to protect foods from cross contamination. It is built around the rules of temperature control and the minimum safe cooking temperature that is required to kill bacteria responsible for causing food-borne illness in a variety of foods.

Archive: 10 Foods You Are Not Storing Properly

Greetings Oh Padawan Chefs,

I’m going to start today with a little bit of housekeeping. If you are visiting the site, you will notice on the right hand side a couple of new items. I’ve added two options to subscribe to the blog, either by email or by using an RSS feed. Hopefully these will make it easier for folks to enjoy what I’m doing here.

Now, on with our show.

About a week or so, my lovely wife sent me an article from Food Network titled 10 Foods You Aren’t Storing Properly. We’re going to talk about this article a little bit and maybe add a couple things to it, because that’s how I roll.

The 10 foods that the article lists are: Fresh Herbs, Tomatoes, Spices, Bread, Raw Meat, Garlic, Berries, Avocado, Mango, and Oil.

Archive: “Dont Cut Me Bro”

Hey all you scruffy looking Nerf Herders,

As promised, I’ve been trying to figure out the best way to post a video of the knife skills I discussed towards the end of Post #3. Unfortunately, I found that I don’t really have the facilities to produce a quality video for you. Needless to say, I’m going to be working on this for the future. In the meantime, I think I’ll steal from some of my close friends and some people that I have a lot of respect for in the culinary community.
